One big kicker is the Costco brisket was $3.79 a pound and the SRF brisket was about $10 per pound.
Once you cover the briskets in salt, pepper, and smoke there isn’t a ton of difference on overall flavor but there was some slight nuances to the SRF brisket that the Costco brisket didn’t have. While your example is on the higher side of what I normally see from the Costco briskets, and I'm a heavy trimmer, but on a 16lb brisket I'll trim 5 or 7lbs of fat and misc bits I don't like.
